Yay! Finally recipe for thick and fluffy pancakes is available! Hope you will like these pancakes as much as I like.
Before you scroll down to the recipe read please my 3 steps of fluffy pancakes.
📌Firstly preheat your non stick pan on medium heat. Once it’s hot, lower the heat down to low-medium heat. Wait about TWO minutes. Don’t skip this part, because it’s very important in our process. Lightly grease the pan with a small amount of butter/ coconut oil, and wipe away any excess butter with a sheet of paper towel.
📌To get perfect sized pancakes, use one size measuring cup (1/4 cup) or soup ladle. Pour the batter from the middle, then continue pouring slowly in a circle to spread the batter into perfect round shapes. Also you can use specially shaped silicone moulds for cooking pancakes or mini size frying pan- the same one you use to cook egg.
📌Allow the pancakes to cook properly. Take your time, devote time to each pancake, and you’ll be SUPER happy with the results. Usually we rush pancakes on high heat, or we flip them too early. I know it takes time, especially when you cook on low-medium heat, but trust me, it’s really worth to try it. Bottom should be cook to a golden brown colour, and when bubbles start forming on top and around the surface, they are ready to flip.
You will have around 6-7 pancakes from the recipe.

A delicious perfect pancakes.
For the batter
- 250 g soy milk
- 1 egg| flax egg *
- 2 tbsp coconut oil
- 60 g buckwheat flour
- 125g all purpose flour
- 20- 25g coconut sugar
- 1tsp baking powder
- pinch of himalayan salt
- In a bowl mix the dry ingredients together. Then add all the wet ingredients and mix until combined.
- Pour the batter from the middle and cook pancake on low-medium heat.
- Cook until bubbles start forming on top and around the surface.
- Flip your pancake and cook around half minute.
- Repeat the process with the rest of your batter.
* How to make a flax egg?
All you need is 1 tbsp raw ground flax seeds and 2 1/2 tbsp water. Mix the ingredients together, and set aside for 5 minutes. Add to the recipe.
